Wining and Dining at Wakeman Town Farm

Westport’s Wakeman Town Farm tonight hosted 25 guests for an “intimate” Chef’s Dinner in the farmhouse’s Tim’s Kitchen. The meal was prepared by chefs at Norwalk’s Cask Republic, 99 Washington St., which describes itself as “a neighborhood restaurant serving upscale tavern fare.” The four-course meal included smoked swordfish loin with parsnip and celery root pastel as well as slow roasted porchetta, a savoury, fatty, and moist boneless pork roast of Italian culinary tradition.
