Wining and Dining at Wakeman Town Farm Image
Westport’s Wakeman Town Farm tonight hosted 25 guests for an “intimate” Chef’s Dinner in the farmhouse’s Tim’s Kitchen. The meal was prepared by chefs at Norwalk’s Cask Republic, 99 Washington St., which describes itself as “a neighborhood restaurant serving upscale tavern fare.” The four-course meal included smoked swordfish loin with parsnip and celery root pastel as well as slow roasted porchetta, a savoury, fatty, and moist boneless pork roast of Italian culinary tradition. Chef’s Desert at Wakeman Town Farm Dinner Image
Carl Carrion, culinary director of the Skal Restaurant Group, which owns South Norwalk’s Cask Republic (99 Washington St.), puts the finishing touches tonight on the desert at the Wakeman Town Farm’s Chef’s Dinner.
